You really exceeded the brief of showcasing Formans to the Academy.
I just wanted to thank you not only for opening the doors of Formans world to the Champagne Academy but also for serving such an incredible lunch. The generous canapes were a real treat, from the quails eggs, to the salmon on belinis, but the best was the vapourised vodka.
That salmon and samphire is always a great combination and the samphire was tender, the champagne sauce complimented it beautifully.
On to baked Alaska, a triumph and great way to finish lunch, the mulled wine was so subtle and washed down with the Krug what could go wrong.
All in all a wonderful day out and I have had many a email to that fact.
